Make these muffins ahead of time, wrap them individually and freeze them so they are ready for the morning rush.
Heat oven to 400°F (200°C). Grease bottoms of 12 muffin cups or line with paper baking cup liners. In a medium bowl, combine flour, sugar, baking powder and cinnamon. Mix well. In a small bowl, combine SunRype Pure Not From Concentrate Apple Juice, SunRype Unsweetened Apple Sauce and an egg. Blend well. Add dry ingredients all at once. Stir just until dry ingredients are moistened (batter will be lumpy). Stir in chopped apples. Fill cups two-thirds full. Bake for 18-22 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.
