Chocolate Chip Cookies

Bake Time:  12-14 minutes

Makes:  2 dozen


2 cups (500 mL)
whole wheat flour
3/4 cup (180 mL)
quick oats
2 Tbsp. (30 mL)
1 tsp. (5 mL)
baking soda
1/2 tsp. (2.5 mL)
1 cup (250 mL)
brown sugar
1/2 cup (125 mL)
coconut oil
1/2 cup (125 mL)
SunRype Unsweetened Apple Sauce
1 tsp. (5 mL)
1 cup (250 mL)
chocolate chips


Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. In a bowl, add flour, oats, flaxseeds, baking soda and salt. Set aside. In a separate bowl, beat brown sugar with coconut oil and SunRype Unsweetened Apple Sauce. Beat in egg and vanilla. Add flour mixture, until just combined. Stir in chocolate chips. Roll dough into 1" (2.5cm) round balls and arrange on baking sheets, 3" (7.6cm) apart. Bake 12-14 minutes or until cookies are golden around the edges. Cool on rack.
