Oatmeal Shortbread

Bake Time:  10-13 minutes

Makes:  3 dozen


1 cup (250 mL)
softened, unsalted butter
1 cup (250 mL)
brown sugar
1 1/2 cups (375 mL)
sifted cake flour
1/2 tsp. (2.5 mL)
1/2 tsp. (2.5 mL)
baking soda
2 cups (500 mL)
quick-cooking oats
1/2 cup (125 mL)
SunRype FunBites 100% Fruit Snacks, cut in half


Preheat oven to 350°F (175°C). In a medium sized bowl, mix together butter and brown sugar with a hand mixer. In a separate bowl, whisk together flour, salt and baking soda. Add 1 cup (250 mL) flour mixutre to the butter mixture, followed by 1 cup (250 mL) oats. Repeat with remaining flour and oats. Fold in SunRype FunBites 100% Fruit Snacks. Drop hard-packed heaping tablespoons (15 mL) of dough on an ungreased cookie sheet. Gently press each cookie with a lightly floured fork to make 1 1/2" (3.8cm) circles. Bake for 10-13 minutes or until pale golden. Cool on rack.
