FruitSource Bites Carrot Muffins (Gluten & Dairy Free!)

Preparation

These muffins are gluten-free and dairy-free.

Prep Time:  10 minutes

Bake Time:  20 minutes

Makes:  1 dozen

Ingredients

1 1/2 cups (375 mL)
blanched almond flour or gluten-free flour
1 tsp. (5 mL)
sea salt
1/2 tsp. (2.5 mL)
baking soda
1 tsp. (5 mL)
cinnamon
1/2 tsp. (2.5 mL)
nutmeg
1/4 tsp. (1 mL)
cardamom
3
large eggs
1/4 cup (60 mL)
honey
2 Tbsp. (30 mL)
coconut oil
1 1/2 cups (375 mL)
carrots, finely grated
1/2 cup (125 mL)
dates, pureed
1 cup (250 mL)
pecans, coarsely chopped

Instructions

Preheat oven to 325°F (160°C). Blend first 11 ingredients in a food processor and then fold in pecans and SunRype FruitSource Bites. Divide evenly between 12 cupcake liners. Bake for 20 minutes or until toothpick comes out dry.
