Apple Juice Sponge Cake


Try this cake topped with our Apple Mocha Icing or layered with our Apple Juice Cake Filling.

Makes 1 Cake


eggs, separated (at room temperature)
1/2 tsp. (2.5 mL)
1 1/2 cups (375 mL)
1 1/2 cups (375 mL)
all-purpose flour
1 tsp. (5 mL)
baking powder
1/2 cup plus 1 Tbsp. (250 mL plus 15 mL)
SunRype Pure Apple Juice
1 tsp. (5 mL)
1 tsp. (5 mL)
lemon juice


In a large mixing bowl, beat egg whites and salt at high speed until moist peaks form (but are not dry). Gradually beat 3/4 cup (175 mL) of sugar until blended. Set aside. In a small mixing bowl, beat egg yolks at a moderately high speed until thick and fluffy, about 2-3 minutes. Gradually beat in 3/4 cup (175 mL) of sugar. Pour egg yolk mixture over egg whites, beat at moderately high speed to blend. Sift together flour and baking powder. With mixer set at low speed, gradually add sifted dry ingredients to egg mixture. When blended, beat in SunRype Apple Juice, vanilla and lemon juice just until blended. Pour into ungreased tube pan. Bake in 350°F (150°C) oven. Invert pan; leave until cold; then remove cake.
